Easy Christmas Coconut Macaroons

Choosing the healthy path is difficult when these sweet temptations are trying to drag you down in order to have a taste with them. But, you can still enjoy the season, by making your own healthy desserts. Try these easy Christmas coconut macaroons the whole family can enjoy them, from the little ones to fussy granma.
Made with coconut whey protein (you can use plain or vanilla too) and shredded coconut, they’re naturally low in sugar. These coconut macaroons are bite-sized balls of goodness that will satisfy your sweet tooth without sacrificing your waistline.
2 large egg whites
2 Tbsp. coconut/plain/vanilla whey protein
⅔ cup unsweetened shredded coconut
2 Tbsp. dark chocolate morsels
Preheat oven to 325° F.
Place egg whites in a clean medium mixing bowl; beat until stiff peaks are formed.
Gently fold in whey protein and shredded coconut.
Drop by rounded Tbsp. onto prepared baking sheet.
Bake for 13 to 15 minutes or until browned; cool.
Melt chocolate in a small microwavable bowl for 30 seconds at 50% heat. Stir and repeat until nibs melt.
Drizzle melted chocolate over cooled macaroons.
