Pumpkin Oatmeal Cookies
After the great success of so many of you downloading the 3 Day Plant-Based Challenge, ( thank you btw!) I had to share a couple more recipes from my carefully curated collection of healthy flexitarian meal ideas, coming out soon! WOW what a mouthful. 🙂
I made these delicious pumpkin oatmeal cookies last night from ‘acouplecooks‘ these are vegan and pretty high on the healthy choice scale. Why?
They contain a vegetable (pumpkin), some flour, no eggs and plenty of warm spices. You can make simple substitutes as I did, I halved the sugar or you could completely replace it with honey or maple syrup, I just didn’t have enough so I used half the amount of sugar desired. I also used Ginger and Clove essential oils to add extra spice, if you do not have good quality oils and know they are safe to ingest, I recommend not using them and stick with the ground ginger as per recipe. These cookies were a real success and I’ve already eaten 5!!!LOL!!

Throwing you back to another one of my favourites, I only shared here in the last 6 months but it’s always a winner for me. Kale and Brussel Sprout Salad this one is NOT 100% plant-based as it contains cheese but you can again make easy substitutes or leave out unwanted ingredients.
